Elizabeth is the Director of Environmental Health at Eataly USA. After graduating from Vassar College, Meltz enrolled in the Institute of Culinary Education in NYC. Stints at restaurants in New York and Rome lead Meltz to the kitchen team at Del Posto- - where she quickly rose through the ranks to Director of Kitchen Operations. In 2009, Meltz recognized an opportunity for the Batali - Bastianich restaurants to better the food safety and sustainability practices in their kitchens and dining rooms and was appointed B&BHG's and Eataly's Director of Food Safety and Sustainability. Meltz now oversees a comprehensive program of environmental health for all of Eataly USA. Meltz's work has been recognized by Fast Company, Bloomberg Businessweek, CNN Eatocracy, and National Geographic Magazine.
